Berkswell Cheese is one of the finest examples of a British ewes’ milk cheese, using only the raw milk from the farms flock of Friesland sheep. The cheese is entirely handmade at Ram Hall Farm near Berkswell, West Midlands, and is matured for 12 months.
We think it's got a very similar flavour profile to Parmesan but with a deep enduring flavour due to the maturation process and use of ewes milk resulting a subtle tang and the characteristic biscuit colour of the rind. It's delicious served on it's own, crumbled onto a smorgasbord of charcuterie or grated onto pasta dishes and salads.
