Chicken chasseur is a classic French dish, ours is made with free range chicken thighs, slow cooked with mushrooms, tomatoes, tarragon and white wine.
It is typically cooked in a skillet or casserole and served with rice or potatoes and makes a delicious hearty meal.
The dish is said to have originated in the 18th century, and it was originally made with game birds such as pheasant or partridge but was later adapted to chicken. The name "chasseur" means "hunter" in French, and the dish is thought to have been named after the hunters who would cook it with their freshly-hunted game.
Perfect for a light supper with a nice glass of vino!
