Cut from the flank, Bavette is a cut that is highly prized in France where they serve it as steak frittes. cook it really quickly in a hot pan or barbecue, no further than medium rare, rest it for 3-5 minutes and serve cut across the grain, delicious. Aged for 21 days, sold individually vacuum packed.
