This is a superb little roasting joint, buried deep within the main thigh muscle its real name is the 'adductor', being an internal muscle its very lean so to aid cooking it has a thin layer of fat added before being strung.
Why is it called bullet though, well when it is removed from the main thigh muscles by a technique called seam cutting the result is a small bullet shaped muscle.
Tender and full of flavour and those who aren't familiar, it's well worth a try for your next Sunday roast. Best roasted fast and hot at 40 minutes a kilo, not forgetting a rest for 30 minutes before carving.
