This cut of beef comes from just between the kidneys on the back bone, and hangs down, hence the name. Its a beautiful cut with a slight steak and kidney flavour, great for barbecuing, cook quickly, and served pink, don't be tempted to over cook it because it will ruin it. Sometimes known by the name Onglette, and often found on French menus a Steak Frites.
