Picanaha steak comes from the rump cap muscle, seam butchered in a Brazilian technique from the main muscles of the rump. This allows the cap muscle to be isolated so it to be cut across the grain instead of with it as it's would when sliced in the traditional English butchery style. This produces a deliciously tender fine grained steak that in Brazil is prized more than fillet as the best steak. They cook these steaks treaded onto a sword over a fire, but a good hot pan or the barbecue will do just as well!
All our beef comes from our own Longhorn cattle that graze on our ancient chalk land pastures in the Lincolnshire Wolds, using our state of the art dry ageing facilities we dry age all our steak cuts for a longer period, these picanaha steaks are aged for 60 days before being butcher and prepared.
