Our latest edition to the cake selection, a fabulous cake made with ginger..... obviously, oat meal, treacle, syrup, unrefined sugar and lard, a list doesn't get any better than that does it. Originally made in Yorkshire and Lancashire this sweet treat comes in several forms and ours is a recipe developed from several old ones and a few tweaks of our own. In true tradition we've made it using lard, which keeps it wonderful moist and also makes it dairy free. It's fantastically gingery and has a gorgeous sticky top, perfect to have in the cake tin ready to deploy at a moment's notice with a cup of tea!
