A true Lincolnshire delicacy, not found outside the county, unless you've had a delivery from us! Made in the time honored way by removing this unique cut from the shoulder of the pig in a butchery technique unique to Lincolnshire, then its is cured in a sweet cure brine like we would for a gammon joint, before being stuffed with fresh chopped parsley by hand. Its then slow cooked in a water bath, originally it would have been in the wash copper in an out house, but we've moved on a bit! Then its hand sliced ready for you to enjoy, a splash of vinegar in our preference, in a nice soft roll. Minimum 225 net weight.
