Pork shoulder is a great roasting joint, more fat than leg keeps it beautifully moist, and it crackles up a treat, because after all that the most important thing right? Simply remove from the vacuum bag a day before you are going to cook it, pat it dry with kitchen paper and pop in the bottom of the fridge to dry out, then a good hot oven 200c and a sprinkle of salt, that's it, turn down after first 20 mins to 160c so it doesn't burn. Vacuum packed, simply select your size from the drop down list.
