All our pork comes from local outdoor reared pigs that are free to roam and wallow to their hearts content, after all happy pigs make tasty pork. The breed varies depending on what is available but is typically Saddleback, Gloucester Old Spot or Berkshire.
Quite uniquely we age our pork for 10-14 days in our state of the art aging room, this reduces the moisture content, develops a deeper flavour and tenderises the meat, as an added bonus it also dries the skin to make for crispy crackling.
