
Just like our other breads we start by making a slow fermented sponge the day before, then the next day we make the focaccia dough and allow it to prove before shaping it into round loaves for a final rise. Once it's ready smother it in our local rapeseed oil before poking it's characteristic dimples in and scattering with rosemary from our garden and sea salt. Once baked it has a fabulously crispy crust and is great for dipping into oil and vinegar, or if your feeling really hungry try Jamie Oliver's stuffed focaccia sandwich.
