
We home cured and smoke our Smoked Gammon Joints using local pork. We blend our own sweet cure brine using sea salt and unrefined sugar for a great flavour and cure the gammons for 4 weeks. Once cured we then smoke over a mixture of apple, oak and plum wood for a rich, yet rounded smoked flavour. A gammon joint is always really handy to have in the fridge, dead easy to cook, simply simmer in a pan of water for 45 minutes per Kg, glaze in the oven if you wish afterwards. Once cooked enjoy hot or cold. Vacuum packed, simply select your preferred size from the drop down list.
