
A few years ago we enjoyed a week's holiday in Sicily, exploring the local area we came across a traditional butchers shop and in it they sold 'Sweet Sicilian' sausages, apparently there's a 'spicy' counterpart.
Unlike the name suggests they're not sweet in flavour but incredibly tasty, seasoned with black pepper, aniseed, fennel and garlic and finished with a grate of lemon zest.
Needless to say we enjoyed them so much we tapped the butcher up for the recipe so we could recreate them one day.
They're a ruskless sausage like our Toulouse and Merguez and filled into chipolata skins to make a fabulous barbecue sausage as well as being great cooked, cut up and used in pasta dishes.
