We love wild garlic season and love to use it as much as possible. For these individual quiches we've gone for the beautiful flavour combination of salty feta with the almost roast garlic flavour of the wild garlic and just to finish it off a little sprinkle of fennel seeds to give an aniseed warmth. Perfect for this time of year as a light lunch or dinner with some salad and maybe a cheeky glass of rosé. We use our famous crisp shortcrust pastry to make the cases and of course, local free range eggs in the mix too. We like to pop these in the oven for 10 minutes to warm them through before serving.
